Chicken Sausage Stir Fry

The truth is, I, like many people, kept raiding the supermarkets before it became clear that the grocery stores were going to stay OPEN and STOCKED. So I have a lot of things I grabbed and it was time to figure out how to put them all to good use. The following stir-fry was inspired by the following two ingredients:

I’m a big fan of the Cava Crazy Feta – it’s darn SPICY and de-lish so the was an obvious grab. The Gilbert’s Smoked Gouda Chicken Sausage was a first time purchase, because A. smoked gouda (yum) and B. the fact that it is fully-cooked and packaged individually increases how long it could stay good in the refrigerator. (Obviously you can do this with ANY type of chicken sausage). So what’s the plan? I had some eggplants lying around and a few remaining cubanelle peppers from the Taco-Spiced Stuffed Peppers. (In all seriousness, I HATE letting food go bad or go to wast, especially in these times — so be flexible, use the fresh vegetables you have sitting around!)

I cut the 2 eggplants into cubes and put them on a sheet tray. Then I took the remaining cubanelle peppers, removed the stem and seeds inside, and then sliced them as well. I tossed the vegetables in olive oil and seasoned the vegetables with salt, pepper and garlic powder. The vegetables roasted at 375 degrees for 40 minutes. Halfway through, make sure to open the oven and give your vegetables a quick toss so they can brown evenly on all sides, like so:

Once your vegetables are done, remove all 4 chicken sausages from the packaging and slice them thinly. In your saucepan, add 1 tB. of olive oil and 1 tB. of chopped garlic and heat to medium-high heat. Once you garlic starts getting some color, add your sausage slices. You want to make sure that your sausage slices get BROWNED and CRISP during this part. Once your sausage is sufficiently browned, add 3 tB. of the Crazy Feta “dip” and allow it to melt. Add your roasted vegetables to the pan and give a quick toss before serving.

***Notice: this is not how the Crazy Feta dip would typically be used – that’s the point – be creative! Give the items in your refrigerator a NEW LIFE by using them in new and innovative ways. Heating the Crazy Feta dip in the saucepan transforms it into a spicy, cheesy sauce that perfectly combines the smoked gouda sausage and your roasted vegetables into one analogous dish. And on that note – I am very excited to see if my husband corrects my use of the word analogous in that context!
